quest is from Amsterdam adv guild 3*,
requirement 'French'
i dont know the name but from what i understand you deliver letter to someone in calais, then talk to some people there, go out South Calais (outskirts) and discover Sophia somewhere

You don't discover Sophia, you "talk" to the Ruins in the outskirts a few times and then the quest is complete. Deliver quest, go to quarters and change to this steward, if you want.

All stewards are the same in function. The only difference between them is their appearance; I picked her as my steward because I liked how she looked.

The country of origin affects the food they offer. In Sophia's case, the same food you find in French taverns.
Other than that, and appearance, they are the same.
