you can buy Violins, Tambourines, flutes, etc. in Item Shops and under "Use Item" you can click on the instrument and your character will play it.

It's just like any other situation where you can perform an action with either an item or a skill; if you have the skill (e.g. surgery, fishing, violin performance), you don't need the item (respectively, first aid kit, fishing rod, violin), with the added bonus that you can get better at the skill than you would be with just the item.
