I see only cedar pine and beech at the shipyard master. How do i get the iron-plated to show at build menue?

East asian ships cant be normal built on iron on EA shipyards, only way to change to iron is improving using iron or national panel as one of the parts

You don't. EA shipyards don't support iron, just like European shipyards don't support rosewood. You must use an iron paneling to change the ship material after it's built.
